You've watched YouTube videos and still don't understand the concept? If so I doubt anyone here will be able to help either.

You were a "chef" and you don't know what sous vide is? flipping burgers and scrambled eggs at the waffle house doesn't make you a chef .
"People boiling NY strips"
Stop trolling, boiling water =212°F who cooks NY strips at 212°? Let alone anything above 140°🤯🧐🙄

Spouting ignorant claims isn't wise either.

Is there a circulating pump in the unit? the Q&A discuss a pump but the specs say:
Pump Volume N/A (no pump inside)

Yes. Bought many times. Their cables are good and the warranty is awesome.

The water circulator is a plastic coated magnetic cylinder just a bit thicker than a pencil and about 2" long which is inside a smallish round "cage" centered on the floor of water oven. The motor that magnetically turns the circulator magnet is under the floor of the water compartment.

This is the same unit as the Dash with a different LCD display arragement, mine(Dash) has worked without any issues for the last year or so, it holds the temp within 0.5°F. For $30 shipped it's a steal.

I don't get these. It's my understanding that I would wrap food in a plastic sheath and then boil it? If that's true that sounds bizarre that I'm boiling food in plastic that comes from oil. It doesn't sound that healthy...

The food doesn't boil, in fact it isn't even close to boiling. For example, steak is 128-130°.
